Puppy Fever

So, I have failed to post anything in about a month. I have a good excuse, however! Nick and I got a 5 week old puppy 3 weeks ago and I swear its more difficult than a human baby would be but I just can't get enough of him. He's taking up all my time and love so I'm sure you guys can excuse me for that, right?

I have three new easy peasy recipes to share with you that are perfectly refreshing for this hot summer-like weather we've been enjoying. Go ahead... Eat your heart out.



 Grilled Pineapple




Ingredients
  • One whole pineapple, cut into slices
  • 2 tablespoons honey
  • cinnamon
Method

After slicing your pineapple, pour honey into a bowl big enough to fit each slice into. Take each slice of pineapple and dip into honey. Then sprinkle lightly with cinnamon. Place pineapple on preheated grill and grill on medium heat for about 3 minutes on each side. You want grill marks on both sides. Enjoy for a delicious, easy desert or snack!

Corn off the Cob with Red Pepper and Basil




I have to give credit to Nick's sister for this one. She made it for us when she came into town and I have been obsessing over it since.

Ingredients
  • 2 ears of fresh corn
  • 1 whole fresh organic red pepper
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon butter
  • 1 tablespoon basil
  • salt and pepper
Method

Use a large knife to remove corn from each ear into a large bowl and dice red pepper. Preheat one tablespoon of olive oil in a frying pan at medium-low heat in a skillet. Cook red pepper for about 3 minutes then add corn and another tablespoon of olive oil. This will cook on medium heat for about 15 minutes or until corn is fully cooked.. Stir occasionally. When done, stir in one teaspoon of butter, one tablespoon of basil, and salt and pepper to taste.

Cucumber & Tomato Salad


Ingredients
  • One whole organic cucumber, sliced
  • Half a carton of grape tomatoes, sliced
  • Half a organic red onion, diced with the grain (not against)
  • Half a lemon
Method

This is the easiest recipe ever. Mix up all the ingredients after slicing and dicing and squeeze the lemon to sprinkle juice all over, mix in and add salt and pepper to taste! This is so delicious as is or you can add couscous, quniona, or whole wheat noodles to the mix to make a summer salad!
