Texas Caviar

I am convinced that this Texas Caviar is the best potluck dish ever. Everyone is always asking "Isn't caviar fish eggs?" Um, no its this delicious mix of beans, corn and fresh ingredients that honestly, I will probably eat more of than anyone at the potluck. Its easy, healthy, and inexpensive. Serve with organic blue corn chips (my favorite), your favorite tortilla chips, or Frito Scoops.

Ingredients
1 can organic black beans, drained and rinsed
1 can organic black eyed peas, drained and rinsed
1 can organic yellow corn, drained and rinsed
1 fresh green pepper, chopped
4 fresh roma tomatoes, chopped
1/2 a red onion, chopped
1 small fresh jalapeño, chopped and deseeded
2 tablespoons fresh clinatro, chopped
2 tablespoons fresh lime juice
2 tablespoons olive oil

Method
After prepping all the fresh and canned ingredients above. Mix them all together in a large serving bowl. Stir in lime and olive oil to the mix. Let chill for an hour before serving and try to be discrete about how much of your own dish you're eating.
