Shrimp Fra Diavolo

I love pasta, but this recipe is one of my absolute favorites because its a seafood pasta. Fra Diavolo means "Brother Devil" in Italian and is the name for a spicy sauce for pasta or seafood, in this case both! This is a Cooking Light recipe that is easy to alternate to your own taste!





Ingredients  

  • 8 ounces whole wheat linguine noodles
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 white onion, diced
  • 1 (14.5 ounce) can of organic diced tomatoes (no salt added), drained
  • 1 (14.5 ounce) can of crushed tomatoes
  • 2 tablespoons canned tomato paste
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 2 tablespoons crushed red pepper
  • 1 fresh lemon, cut in half
  • salt and pepper
Method

Boil water and make noodles as directed on package.
Heat 1 tablespoon extra virgin olive oil on skillet. Add 1/2 tablespoon garlic and shrimp, cook on both sides for about 3 minutes or until done. Set aside and keep warm.
Use the same skillet to heat the remaining tablespoon of olive oil and add onion, saute until soft. Add remaining garlic, canned foods, basil, oregano, crushed red pepper, and squeeze juices from the half lemon into the pan. Cook until sauce thickens and turns dark red in color. Add shrimp and cook until warm. Serve over noodles!

You could add diced peppers, mushrooms or any other ingredients to the sauce to change it to your liking! Enjoy!
