
Ingredients
- 4 chicken breasts
- 1 can organic great northern beans, drained
- 1 can white corn with jalapeƱos, drained
- 1 can green chilies
- 1 can diced canned tomatoes, drained (Again, I really enjoy simple truth organic canned tomatoes because they are often times canned with no salt added)
- 2 cups organic chicken stock
- 1 small white onion, chopped
- 1/2 teaspoon garlic powder
- 1 tablespoon cumin
Method
Begin by boiling chicken breasts, when they are fully cooked allow them to cool and shred. While chicken is boiling, chop onion and drain canned beans, corn, and tomatoes. Add all ingredients to a large stock pot and allow to come to a simmer. Simmer for about 20 minutes, stirring often. Turn down to low heat and cover. Cook for about 1 and 1/2 hours.
Serve with toppings and eat way too much!
