
Ingredients
- 1 30 ounce bag of frozen potatoes, diced
- 1 14 ounce can of organic chicken broth (I prefer the simple truth brand when it comes to any sort of broth or stock)
- 1 can cream of fat free cream of chicken soup
- 1 onion, chopped
- 1 garlic clove, minced
- 1/4 teaspoon pepper
- 1 package cream cheese (don't try using fat free in this recipe, it just doesn't work!)
Method
Combine all ingredients in crock pot except cream cheese. I let it cook all day on low while I'm at work which can vary from 6 to 10 hours. 1 hour before serving, add the cream cheese. It should completely melt into the soup. Cook bacon on stove top until crunchy. Crumble into soup and stir in fat free sour cream and fat free shredded cheddar.
