Super Easy Baked Potato Soup

Okay, so I think its pretty obvious I really like soup! I got this recipe from Nicks mother who is a wonderful cook. Its so delicious and has the consistency of a baked potato!




Ingredients
  • 1 30 ounce bag of frozen potatoes, diced
  • 1 14 ounce can of organic chicken broth (I prefer the simple truth brand when it comes to any sort of broth or stock)
  • 1 can cream of fat free cream of chicken soup
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon pepper
  • 1 package cream cheese (don't try using fat free in this recipe, it just doesn't work!)
Toppings: Bacon, fat free shredded cheese, and fat free sour cream.

Method

Combine all ingredients in crock pot except cream cheese. I let it cook all day on low while I'm at work which can vary from 6 to 10 hours. 1 hour before serving, add the cream cheese. It should completely melt into the soup. Cook bacon on stove top until crunchy. Crumble into soup and stir in fat free sour cream and fat free shredded cheddar.
