Nicks Skillet Breakfast

Nick and I love waking up on Sunday mornings and making breakfast together while we drink our coffee. Nick always finds recipes for and makes our breakfast, but I'm in charge of everything else we eat. Its so worth it though and its one of my favorite things about him. He found this recipe on howcrazycooks.com




You will need a cast iron skillet for this recipe

Ingredients
  • Eggs (this is your preference, we made 4 because we each wanted 2 eggs)
  • 5 pieces of bacon 
  • 2 russet potatoes, diced
  • 1 large clove of fresh garlic, minced
  • 1 white onion, diced
  • 1 red pepper, diced
  • 1 small package fresh mushrooms
Method

Preheat oven to 350 degrees,

On the stove top, cook bacon in iron skillet as usual. Set aside. Sautee garlic, onion, pepper and mushrooms in the remaining bacon grease. Add diced potatoes. Cook this mixture until potatoes are fully cooked. Crunch up bacon and add to mixture. Create small indentations in the mixture for your eggs. Crack eggs into the indentations and bake for 10 minutes for runny yolks and 15 for solid!

So filling, healthy and delicious!
