Cheesy Quinoa, Chicken, Broccoli Casserole

Casseroles are another perfect dish for the cooler months. This garlicky, cheesy casserole is delicious and comforting for cold nights. Its easy to throw together and can be put together the night before. Just cover bake ware with plastic wrap and refrigerate.

Ingredients

3 chicken breasts, cut into bite size pieces
2 fresh garlic cloves, chopped
2 1/2 tablespoons flour
1/2 cup skim milk
1 tablespoon olive oil
1/4 cup water
1 package of frozen broccoli
1 package of frozen quinoa
1/2 cup parmesan cheese
1/2 cup cheddar cheese

Method

Preheat oven to 400. Spray cast iron with cooking spray. Cook chicken and set aside with juices. While chicken is cooking, mix together milk and flour and microwave quinoa and broccoli. Only microwave broccoli for 2 minutes and 30 seconds. It should still be cold. Put olive oil in cast iron and sauté garlic in olive oil. Add flour mixture, chicken juices, and water. Bring to a boil, stirring frequently. When the mixture has thickened, remove from heat and allow to cool slightly. Stir parmesan cheese in until completely melted. Stir in quinoa, chicken, and broccoli. Spray glass bake ware with cooking spray. Spoon into glass bake ware and top with cheddar cheese. Cook for 15 minutes.
