Beef tips with Mushrooms & Brown Rice

This meal is perfect for lazy Sundays. It's easy to throw together and the onion, garlic, & mushroom create a delicious aroma through my little apartment as its cooking! Mmmm nothing's better than a house full of the smell of dinner cooking!



Ingredients 

1 pound extra lean beef for stew (I make sure to buy it pre-cut up into bite size pieces) 
1 can all natural low sodium beef broth
1/4 cup all purpose flour
2 cups sliced fresh mushrooms
1 whole white onion, diced
1 fresh garlic clove, minced
1 tablespoon olive oil
1 tablespoon & a half low sodium soy sauce
Sea salt and black pepper 
1 package boil-in-the-bag brown rice

Method

Toss beef in flour and coat crock pot with olive oil. Transfer beef to pot & add the onion, garlic, mushrooms, soy sauce, beef broth, and a sprikle off salt & pepper. Turn crock pot on high and cook for 3 hours. When there is 30 minutes remaining, prepare instant brown rice. Serve beef with gravy over brown rice. Enjoy!
