Quinoa Salad

This dish is so fresh, so easy, and super healthy. I have included red and white quinoa and I mix them because I like the difference in texture. This dish is perfect as a side dish or as a main dish with grilled chicken. Allow yourself some time between cooking the quinoa and mixing the ingredients. It's best served at room temperature. 

Ingredients
1 cup red quinoa, cooked as directed
1 cup white quinoa, cooked as directed
1 smaller English cucumber, sliced into fourths
1 large tomato, diced
Feta cheese
1 tablespoon olive oil
1 tablespoon juice from a lemon
Sea salt

Method
While still warm mix both quinoas together & toss with olive oil, lemon juice and sprinkle with sea salt. After quinoa has cooled down add cucumber, tomato and feta then mix & eat up!
