Goulash!

My Dad used to make goulash when I was little & it was one of the meals I looked forward to most! I loved how he always added green pepper. I put my own twist on it and add mushrooms and spinach. Anything is better with mushrooms! Serve this easy meal with fresh garlic bread & Parmesan cheese!

Ingreidants

1 box quinoa noodles
1 green pepper, chopped
1 onion, chopped
1 garlic clove, minced
1 package spinach leaves
1 pound lean ground turkey (you can use whatever type of ground meat you like - I am not a fan of ground beef but that is what many people use for goulash)
1 can crushed tomatoes
1 can tomato sauce
1 can mushrooms, drained
1 tablespoon Italian seasoning
A dash of salt and pepper

Method

Cook ground meat in a skillet with onion, green pepper and garlic until meat is fully cooked. Stir in tomato paste, crushed tomatoes and mushrooms, add Italian seasoning and salt and pepper. Allow to simmer while you cook the noodles as directed on the box. Drain noodles and stir in with sauce! Enjoy!
