Ingredients
8 whole wheat tortillas
1 pound chicken breast, cooked and shredded
3 tablespoons butter
3 tablespoons flour
2 cups (one can) all natural low sodium chicken broth
1 (4 oz.) can green chiles
1 cup reduced fat sour cream
2 cups Monterey Jack cheese

Method
Preheat over to 350 and Spray 9x13 glass casserole dish with cooking spray. Mix chicken & one cup of cheese, put in tortillas, roll and put in casserole dish. Set aside.
Melt butter is sauce pan. Add flour and chicken broth, whisk until smooth over medium heat. Cook until slightly bubbly and thickened. Remove sauce pan and mix in green chiles and sour cream. Poor over enchiladas and bake for 22 minutes, broil after for 2 minutes.
