Roasted Potates

This recipe is my new favorite. It works with baby red potatoes, fingerlings, and new potatoes. For the really big ones, I cut them in half.

Ingredients

Potatoes (any kind and any amount is fine)
2 tablespoons olive oil
Minced garlic
Sea salt
Dried parsley

Method

Preheat to 425. Cut large potatoes in halves. Toss in olive oil. Place on baking sheet and sprinkle with desired amount of seasonings. Place in oven and cook for 25-30 minutes.
