Quinoa Mac & Cheese

This is as healthy as you can get Mac & Cheese! Made with my favorite noodles (totally guilt free & taste exactly like wheat noodles) & kielbasa! Enjoy this reciepe with garlic bread! 

Ingredients 

1 box quinoa noodles, cooked as directed
1 package Simple Truth pork kielbasa sausage - sliced and seared on a frying pan
3 tablespoons Panko breadcrumbs
3 tablespoons olive oil
2 tablespoons flour
2 cups of skim milk
1 teaspoon paprika 
1 cup shredded reduced fat sharp cheddar cheese
Salt and pepper to taste

Method

Preheat oven to 350.
Breadcrumbs: mix bread crumbs & 2 teaspoons olive oil in a small bowl and set aside

Cheesy sauce: Heat two tablespoons and remaining teaspoon of olive oil in a sauce pan over medium high high. Add flour, paprika, and salt & pepper. Whisk in milk and continue to whisk for about 5 minutes. The sauce should slightly thicken. Take off heat and add cheese.

In a bowl, mix noddles, sauce & kielbasa. Spray a casserole dish with cooking spray and spoon into the dish. Top with breadcrumbs. Cook at 350 for 15 minutes. Allow about 10 minutes to cool then serve!
