Okay, so this is not "homemade" by any means but I had to save the idea because it's brilliant, it's fast, it's easy, and it's delicious. I love anything Morning Star makes so I used Morning Star veggie chick'n patties for the "chicken" but if you have a favorite vegetarian supplement for chicken I'm sure it would be just as delicious. I also don't eat wheat noodles and supplement them with quinoa noodles. They're just as delicious, not sure you could taste a difference but wheat noodles would also work just fine.
Ingredients
One box Ancient Harvest organic quinoa noodles - any shape will do, I used the original spaghetti noodle shape for this reciepe, cooked as directed
2 Morning Star chick'n patties - also cooked as directed
Your favorite homemade or premade spaghetti sauce, heated
Fresh shredded Parmesan cheese
Method
Cook all ingredients as directed, top with Parm cheese!
