My boyfriends sister made this delcious breakfast for us when we visited her over the holidays in Colorado. I immediately fell in love. You can't say no to anything with green chilies in it!
Ingredients
1 pound ground chorizo (if you find that chorizo is too spicy for you, you can use ground chicken sausage!)
2 small bundles spinach
1 tablespoon olive oil
2 cups reduced fat milk
8 eggs
1/4 teaspoon sea salt
4 whole wheat tortillas
2 cups grated Monterey Jack cheese
2 four ounce cans green chiles
Sour cream
Method
Brown sausage in a skillet then set aside. In the same skillet, add olive oil and spinach. Cook spinach on med-high heat until wilted. As spinach is cooking, whisk eggs, milk and salt in a large bowl.
Oil the bottom of a 9 by 13 casserole dish and place two tortillas down. Cover with 1/3 of the cheese, half the spinach, a can of green chiles, 1/2 the sausage and half the egg mixture. Place down two more tortillas and repeat. After that, too the dish with the remaining 1/3 cheese & cover with foil. Chill for 2 hours or over night.
Preheat oven to 350 and bake for 50 minutes. Allow to cool for 10 minutes and serve with a dollop of sour cream!
